I made this soup this weekend.. The original recipe asked for broccoli and cauliflower, but I used carrots instead. I'm glad I did because it went really well with the overall flavor. With this soup and a fresh baguette, you'll be set for a couple days.
I know I've been lagging hard at putting up recipes since the beginning of this year. But, I just a made a pot of this chili the other day, and it's been perfect for the beginning of winter weather here in the Bay Area. This is as easy as cooking gets and it really tastes better as a leftover. Some of the ingredients are optional are noted with an asterix. Also, the beans can also be made from dry beans, but I figure I'd keep it super easy for others.
Another soup recipe to help deal with the winter cold. I made this one last night and it was so good and easy to make. Looking forward to the leftovers.
This year I've made it a habit to cook alot more often and thought I'd share some of the better things I've made. I"m a total rookie cook, so I've been getting alot of ideas from Vegweb. The recipes posted on there are pretty hit or miss, but this stew kept came out really good and I enjoyed it for a few days. It's really easy to make and good for days like today.. I'm always looking for new vegan things to make, so send me what you got.
